Curried Chickpea Salad

This recipe was shared with me from one of my previous RD coworkers so I can't take credit for it, but man is it good! Thanks Gale Cohen, RD for sharing your love of herbs and spices!

Mix Dressing-

3 Tbsp Tahini

1 Tbsp Olive Oil

2 Tbsp maple syrup or honey

2 Tbsp water

Juice of half a lemon

2 tsp apple cider vinegar

1 Tbsp curry powder

1 tsp turmeric

Salt and pepper to taste

Place in bowl and whisk until blended then add to salad below

​

To make salad, place the below ingredients in a large bowl

​

1 Can chickpeas drained/rinsed

½ cup scallions

½ bunch cilantro finely chopped

½ cup raisins, dried figs chopped or dried cranberries

½ cup of slivered almonds
